VIDEO: Restaurateur Marc Warde Lifts the Lid on Airline Catering

APEX Insight: In the latest episode of APEX Insider, restaurateur and airline catering consultant Marc Warde explains why the industry needs to change its attitude toward special meals and food waste.

In this edition of APEX Insider, Marc Warde, airline catering consultant and owner of Niche – London’s first fully gluten-free restaurant – discusses why he the believes gluten-free meals served on board are “not great, generally speaking.”

Perhaps most importantly, Warde highlights the fact that most airlines don’t offer “fully registered, fully accredited” free-from meals for fear of “being sued by somebody who actually gets sick.”

Warde’s interest in special meals is a personal one. “I feel quite strongly that there’s not that much for us celiacs on airlines […] and saw it as my mission to try and move things along in that area,” he explains.

Warde also talks about the need for the airline industry to cater to an even broader range of special dietary requirements. For example, he says, “Veganism and vegetarianism are massive. We’ve had to increase our offer in those areas by about 50%.”
