Aeroméxico Redefines Business Class Dining with NewTerritory Collaboration

Aeroméxico is adding a distinct taste of modern Mexican culture to its business class dining experience, as it aims to turn every meal into a reflection of national identity. In partnership with global aviation and hospitality design studio NewTerritory, the airline has introduced a bespoke dining and glassware collection for its Premier One service that blends heritage, craftsmanship, and operational efficiency. The initiative places culture at the center of the onboard experience transforming how food is presented, shared, and remembered in the air.
Bringing a Taste of Modern Mexico to the Table
Following the rollout of cabin upgrades across its fleet, including refreshed seating, updated textiles, and new bedding, the airline then shifted its focus to the softer elements of the journey, reimagining the human moments that define long-haul travel.
In Mexico, food is about connection, storytelling, and shared experience. Drawing on that cultural foundation, Aeroméxico worked with NewTerritory to design a bespoke collection of more than 15 pieces, including plates, bowls, mugs, and glassware, that express Mexican identity while functioning seamlessly in the cabin environment.
The new Premier One collection turns business class dining into a cultural experience. Instead of serving meals on standard dishes, the airline now uses tableware inspired by Mexican craftsmanship. The porcelain references traditional ceramics, with tones inspired by terracotta and the deep black hues of Oaxacan clay. The slightly uneven shapes are intentional and highlight handmade craft over factory perfection.

The glassware adds to the story as well. The blue tint is inspired by recycled glass used in tequila bottles, where small bubbles and slight color changes are part of what makes it unique. Onboard, these details subtly connect passengers to Mexican culture while still looking clean and modern.
Aeroméxico Vice President of Product and Onboard Services Antonio Fernandez views the project as the final piece in a larger brand transformation. “Over the last several years we have built consistent, modern hard products with beautiful cabins, great seats, and a refined brand image,” he said. “To complete this onboard concept, we needed to relaunch our soft products in a way that brings Mexico’s culture and hospitality to life.”
He added that the collection “reflects modern Mexico in the air, while also future-proofing our service moments and improving efficiency through smarter, lighter, and more sustainable design.”
Designing Culture for the Realities of Flight
While the collection draws deeply from heritage, it was engineered for aviation. Every piece was developed to balance warmth and practicality. Weight, durability, stackability, and galley space constraints shaped the final forms.
Lightweight materials help reduce overall aircraft weight, supporting fuel efficiency. Space-saving designs help with storage and improve service flow, allowing crew to deliver a more seamless and attentive experience. The result is a system that enhances both passenger comfort and operational performance.

NewTerritory treated the project as a way to translate culture into design. The idea was not to simply decorate the cabin with obvious symbols, but to reflect a modern, evolving Mexico through materials, shapes, and color. NewTerritory Director of Client Partnerships Nadja Orwell explained that this was the goal behind the concept.
“From the moment passengers step onboard, they are welcomed into a Mexico that respects its roots while presenting itself with confidence and warmth,” she said. “This wasn’t about decoration. It was about creating a dining experience worthy of the culture it represents.”
The design philosophy draws inspiration from the Milpa, the traditional Mexican agricultural system based on harmony and coexistence. That concept translates into a service style that feels communal and intentional. In Premier One, dining feels more like an experience and fits naturally with the slower pace of a long-haul flight.
The collection is designed to adapt as menus and wellness trends change. It gives Aeroméxico the flexibility to update how meals are presented over time while keeping a consistent look. This way, the dining experience can evolve as passenger expectations shift.
The rollout will take place across Aeroméxico’s Boeing 787 fleet in 2026. International travelers will get an early introduction to modern Mexican culture before landing, while Mexican passengers will see their national identity reflected through subtle, thoughtful design details.
